Selling rotisserie chickens requires a completely different interior layout than most simple catering outlets. Large rotisserie devices generate high temperatures, occupy a large area and require properly designed ventilation.
Therefore, we start the project by determining the number of rotisseries, their capacity, dimensions, power supply method and the planned number of chickens prepared in one cycle. The way the raw product is stored, the place where ready-made chickens are stored, and the method of portioning and issuing orders are also important.
If the offer also includes fries, potatoes, salads, bread, sauces or other additions, additional devices and an appropriate amount of cooling and working surface must be provided.
