The electrical installation in a catering trailer should be designed only when it is known what devices will work inside. The mere information that "230 V sockets" or "400 V power" are needed does not say enough. Two points with identical dimensions may have completely different energy requirements.

When designing an installation, you should not start with the number of sockets. First, you need to prepare a list of devices, check their rated power and power supply, determine which ones will work simultaneously, and then divide the receivers into appropriate circuits.

The electrical installation should be designed based on actual devices and their simultaneous operation. 230 V may be enough for a simple point with a low power requirement, but an extensive catering operation with an oven, grill, fryers, water heater and cooling often requires a three-phase 400 V power supply. Why does electrical installation need to be planned before production?

The electrical installation is one of the elements of the trailer that is very difficult to change later without interfering with the finished structure.

Cables are routed inside the structure or building, sockets are located in specific places, the switchgear must be accessible, and fixed devices require prepared power points.

If, only after the interior is finished, it turns out that the fryer is to be placed on the opposite side or the new furnace requires a different power supply method, the change may mean:

  • disassembly of furniture,
  • construction of new culverts,
  • changing the circuit layout,
  • moving sockets,
  • interference with walls,
  • reconstruction of the switchgear.

Therefore, the installation should be designed in parallel with the interior.

The best place to start is not to ask:

"How many sockets should I make?"

Better questions are:

*which work simultaneously?

  • what devices will be used?
  • what is their power?
  • what is their supply voltage?
  • which are permanent devices?
  • where exactly will they be placed?

230 V and 400 V – what are the differences from the point of view of the trailer owner?

In a typical installation, we find both single-phase devices powered by 230 V and solutions using three-phase 400 V power supply.

For the trailer owner, however, the most important difference is not the number of volts.

It is primarily about the ability to power a larger number of high-power devices and appropriate load distribution.

At a simple point of sale, demand may be low.

For example, a trailer with:

  • a small fridge,
  • lighting,
  • cash,
  • small devices,

may have completely different needs than a kitchen equipped with:

  • several fryers,
  • electric grill,
  • bake,
  • cooling table,
  • freezer,
  • water heater,
  • hood,
  • fans.

Therefore, the decision between 230 and 400 V should result from the power balance and the way the devices are used, and not from the assumption that one variant is always better.

When is 230V enough?

Single-phase power may be sufficient for simple concepts with limited power requirements.

It may concern, among others, some points:

  • selling simple products,
  • small cafes,
  • selling cold products,
  • small dessert points,
  • activities that use little electrical equipment.

However, this does not mean that every cafe or dessert place will automatically accommodate a simple power supply.

A professional coffee machine, water heater, ice maker, refrigeration and additional equipment can together create significant demand.

Therefore, real device data is also needed here.

When is it worth using 400 V?

Three-phase power supply becomes particularly important where there are several high-power devices.

Typical examples are:

  • furnaces,
  • large grills,
  • larger fryers,
  • extensive kitchen equipment,
  • several heating receivers operating simultaneously.

The advantage of a three-phase installation is, among other things, the ability to sensibly distribute large loads.

This is important because a catering trailer may have many single-phase receivers, which together require a lot of power.

However, 400 V should not be interpreted as:

"a more powerful socket for everything".

This is part of the overall installation design.

Why doesn't 400V mean every appliance has to be three phase?

This is a common misunderstanding.

The trailer can be powered by a three-phase connection, and at the same time most of the devices inside can operate on 230 V.

The installation design allows you to divide individual circuits between phases.

Thanks to this, for example:

  • one group of devices works on one phase,
  • second on next,
  • third on next,

and a device requiring three-phase power may use a suitable 400 V circuit.

The detailed division must, of course, be made by the person designing the installation.

How to prepare a list of devices for an installation project?

It is best to create a table.

Don't save:

“fridge, fryer, grill.”

It's not enough.

Specific parameters are needed.

Rated power of the device – where to find it?

The best source is:

  • technical card,
  • instructions,
  • nameplate,
  • official manufacturer documentation.

It is not worth basing the project on information:

"a similar fryer has about 3 kW."

Two devices that look almost identical may have different parameters.

This is particularly important when:

  • heating devices,
  • furnaces,
  • fryers,
  • coffee machines,
  • water heaters.

Total power and actual demand

The first step is to add up the power of the receivers.

But this is just the beginning.

If we have:

  • grill,
  • two fryers,
  • cooling,
  • heater,
  • ventilation,

you need to check which devices will work at the same time.

In the gastronomy industry, the answer is often:

most of them.

During the busiest hour:

*lighting is on.

  • the grill is hot,
  • fryers are working,
  • refrigerators cool,
  • ventilation works,
  • the heater can start,

Therefore, the balance should not be made for an ideal scenario in which devices "politely" turn on one after the other.

Which devices work simultaneously?

It is worth performing a simple rush hour simulation.

For each device, select:

permanent job

e.g.:

  • cooling,
  • ventilation,
  • lighting.

frequent work

e.g.:

  • grill,
  • fryers,
  • bake.

periodic work

e.g.:

  • heater,
  • some auxiliary equipment.

Then check out the most challenging realistic scenario.

This provides much more information than just the number of devices.

How to calculate the approximate power demand?

For the first step, you can create a simple table.

As an example, let's assume that the list of devices looks like this:

Then, devices that can work simultaneously are marked.

Don't enter random values found on the Internet.

Electrical circuits – why shouldn't everything work from one?

A catering trailer often has a lot of high-demand equipment.

Connecting all loads to one random circuit is a bad approach.

The project should specify, among other things:

  • division of receivers,
  • security,
  • wire cross-sections,
  • method of installation,
  • load sharing.

Thanks to this, the failure of one element does not necessarily mean that everything is disabled.

Example:

a problem with one device should not unnecessarily deprive the entire trailer of power, including lighting and cooling.

However, the exact method of division should always be adapted to the project.

Fryers, grills and ovens

Heating devices are usually the most demanding group.

Electricity is converted directly into heat, which is why large devices can have high power.

This includes, among others:

  • fryers,
  • grill plates,
  • pizza ovens,
  • salamanders,
  • heating devices.

They often decide whether a simpler power supply will be sufficient.

It is worth knowing their parameters before choosing an installation variant, and not after making the switchgear.

Refrigeration equipment

Refrigeration usually has a lower power rating than the largest heating devices, but runs for a long time.

The trailer may contain:

  • refrigerators,
  • freezers,
  • cooling tables,
  • extensions,
  • sites.

When designing, you should also check the manufacturer's recommendations regarding the power supply and protection of a specific model.

It is important that the failure of another device does not unnecessarily result in the entire cooling system being turned off.

Coffee machine and bar equipment

In a mobile cafe, the coffee machine is often one of the main receivers.

This may include:

  • grinder,
  • ice maker,
  • milk cooler,
  • blender,
  • dishwasher,
  • heater.

Therefore, the seemingly "light" concept without grills and fryers does not necessarily mean low electrical requirements.

This is a good example of why the menu is not sufficient to determine the type of installation.

Water heater

An electric water heater is easy to miss.

It is located under the sink, is small and does not directly participate in the preparation of the product.

However, it can be a device with significant power.

It can be turned on at the same time as the kitchen appliances are running.

Therefore, it should have been included in the balance sheet from the beginning.

Ventilation and air conditioning

Fans, exhaust and air conditioning also require power.

In a point with a large number of heating devices, ventilation may operate throughout the entire working period.

Therefore, it should not be treated as a device that is turned on occasionally.

Continuity of its operation during peak kitchen load hours is particularly important.

How to disassemble large receivers?

In a three-phase installation, the load must be distributed appropriately.

You should not accidentally group most large single-phase appliances on one phase, leaving the others much less loaded.

This is a task for the designer/installation contractor.

However, it is important for the owner to provide the correct list of devices.

Without it, the electrician has no basis for sensible load distribution.

Switchgear in the catering trailer

The switchgear should not be accidentally hidden in the last available space.

It should be:

  • available,
  • protected against damage,
  • appropriately located in relation to the conditions prevailing inside,
  • can be operated without dismantling the structure.

It should not be placed in a place that will later be blocked by equipment or storage.

The switchgear is a technical element that may require access both during use and service.

Installation security

The installation must have appropriate protective measures.

The selection of protection depends on the design and parameters of the circuits.

Electrical installations use, among others, overcurrent protection and anti-shock protection solutions. Polish technical conditions for building installations indicate, among others, residual current devices as a supplement to anti-shock protection and overcurrent circuit breakers in receiving circuits. This regulation applies to building installations, so all its requirements should not be automatically transferred one-to-one to the mobile trailer; however, it shows the role of these protective measures in low voltage installations.

In mobile construction, appropriate protective measures should be selected for the specific project and applicable technical rules.

Residual current protection

Residual current circuit breakers are one of the elements of anti-shock protection used in electrical installations.

They are not intended to replace all other protective measures.

It should also not be assumed that the mere use of one residual current device automatically means that the installation has been properly protected.

The whole system counts:

  • installation method,
  • protective wires,
  • overcurrent protections,
  • division of circuits,
  • appropriate equipment,
  • correct measurements after taking.

Grounding and protective conductor

The metal elements of the trailer and the environment in which there is water mean that the issue of protection against shock cannot be treated lightly.

The detailed method of implementing the protective installation depends on the design and power supply method.

Do not improvise the solution on site by accidentally connecting cables.

Once completed, the installation should be properly inspected.

Where to place the sockets?

Plan sockets based on the actual layout of devices.

It's not enough to do "a lot of them".

A poorly placed socket can be virtually useless.

Before determining the location, check:

  • where the device is located,
  • which side the cable is on,
  • is it a permanent device,
  • will it be moved,
  • whether doors or drawers open in front of him,
  • is there water nearby,
  • whether there is an intense heat source nearby.

Well-planned power points reduce the need for additional extension cords and branches.

Why shouldn't extension cords replace proper design?

An extension cord may be a useful item in a specific situation, but it should not be the solution to fixing a poorly designed permanent installation.

If after starting it turns out that:

  • missing socket at the fryer,
  • the coffee machine is too far from the power supply,
  • several large devices need to use branching,

the problem arose earlier – at the design stage.

In the catering industry, many devices work for long periods of time and with heavy loads.

Therefore, permanent stations should have properly planned power points.

Sockets near water and heating devices

The catering trailer combines several challenging environments:

  • water,
  • high temperature,
  • a pair,
  • fat,
  • intensive cleaning.

The location of sockets and accessories should take these conditions into account.

Electrical points should not be installed where they are exposed to:

  • pouring,
  • direct steam action,
  • strong heating,
  • shocks during operation.

The selection of appropriate equipment and installation method is the responsibility of the designer and installation contractor.

External electrical connection

The trailer must receive energy from an external source.

Therefore, you need the right connection point.

Already when designing, it is worth determining:

  • power supply method,
  • required power level,
  • connection location,
  • method of routing the external cable,
  • conditions in which the trailer will be used.

The connection should not be located in a place exposed to accidental damage during operation or transport.

Connection at a permanent sales point

If the trailer stays in one location most of the time, you can prepare the power supply exactly to its requirements.

It's a comfortable situation.

Before making the connection, it is worth knowing:

  • required voltage,
  • power,
  • connection type,
  • distance from the switchboard,
  • cable parameters.

However, do not assume that the installation parameters at your future location are sufficient without verification.

Power supply during a festival or event

The situation is different here.

The organizer may provide specific types of connections and specific power.

Therefore, it is worth communicating the actual demand before registering for the event.

If the trailer needs a large power supply, the organizer must know about it in advance.

Otherwise, it may turn out that the available connection does not allow all devices to be turned on.

What to do if the organizer provides too little power?

Don't solve the problem by accidentally disabling security or improvising connections.

Possible scenarios must be determined in advance.

You may need to:

  • limiting simultaneous operation of some devices,
  • use of another power source,
  • change of connection,
  • change of station configuration.

But the decision must be technically justified.

If you can't run your grill and fryers at the same time during peak hours, it can seriously limit your business's efficiency.

Therefore, the possibility of available power supply is also an element of business planning.

Generator as a power source

The generator can provide independence from the site's infrastructure.

But its selection also requires calculations.

Among other things, you need to take into account:

  • device demand,
  • nature of the load,
  • terms of use,
  • noise,
  • exhaust fumes,
  • installation location,
  • fuel.

You should not buy a generator based solely on the simple sum of the devices' power without analyzing the operating conditions.

Detailed selection should be made by a person with knowledge in this field and taking into account the unit documentation.

Is it worth preparing the installation in advance?

Yes, but the stock should make sense.

If it is known that in a year you plan to add:

  • second fryer,
  • larger coffee machine,
  • additional refrigerator,

it is worth considering the possibility of development already during design.

However, this does not mean installing a huge number of circuits "just in case".

A specific assumption is better:

"in the future, a device of a specific nature may appear in this place."

Then you can consciously prepare the installation and the place.

Electrical installation and trailer GVW

The installation itself is usually not the heaviest element of the trailer.

But the decision to install it depends on the number of devices, and this is directly related to the weight.

If the project requires:

  • several fryers,
  • large furnace,
  • advanced cooling,

the trailer will also require:

  • greater electrical power,
  • larger space,
  • larger GVM reserve.

Therefore, the electrical installation should not be analyzed in isolation from the structure.
