The interior design of a catering trailer determines what everyday work will look like after starting the business. Therefore, it is not worth starting interior design with choosing furniture. Only then can you create a layout of workstations that will support work instead of hindering it.

A good catering trailer interior should be designed in accordance with the sequence of activities performed. First, define the menu and devices, then divide the interior into storage, preparation, thermal treatment, cooling, washing, packaging and serving zones. Why is the interior layout of a catering trailer so important?

A catering trailer has a limited area, so design errors are much more noticeable than in a large stationary establishment. A poorly positioned refrigerator may block the passage, an open cabinet door may make it impossible to use the sink, and a device placed a few dozen centimeters too far may mean hundreds of additional movements during one working day.

In practice, it is not about "fitting all the devices" inside. A good design should allow you to conveniently perform subsequent activities.

The employee must collect the product, prepare it, process it, add ingredients, pack it and deliver it. If at every stage he has to go to the other end of the trailer, squeeze past a co-worker or open a door-blocking device, even a large interior may not function properly.

The aim of the project is not to make the most of every centimeter. The goal is to create a logical work system.

Start with the menu, not the furniture

One of the most common mistakes is starting the project by choosing cabinets, countertops and the appearance of the interior.

Meanwhile, the first document should be menu.

Each menu item represents a specific process and equipment. A burger requires a different station than a pizza, a kebab a different station than ice cream, and rotisserie chickens yet another.

For example, for burgers you may need:

  • grill plate,
  • fryers,
  • meat cooling,
  • cooling vegetables,
  • place for rolls,
  • sauces,
  • folding station,
  • space for packaging,
  • issuing area.

When making pizza, the following will be important:

  • bake,
  • space for cake,
  • refrigerated table for ingredients,
  • pizza forming countertop,
  • post-baking station,
  • cutting,

When it comes to kebabs, there are, among other things, vertical grills and ventilation that is very important.

Therefore, one additional dish on the menu can affect the entire project.

If you add fries to burgers, a fryer appears. If you add coffee - an espresso machine, milk cooling, cups and a barista work area. If you're adding a dessert, you'll need additional ingredients, utensils, or appliances.

The earlier the menu is established, the more predictable the design will be.

Describe the process of preparing one order

Once you know the menu, you need to analyze a single order.

Don't start drawing the interior just yet.

Record step by step what happens from the moment the order is accepted to its release.

An example process in a burger restaurant may look like this:

A well-designed trailer can be divided into several basic zones.

Not every trailer needs all of them to the same extent, but it is worth analyzing them.

How to plan the order reception area?

The place where orders are accepted is usually located at the sales window.

May include:

  • terminal,
  • POS system screen,
  • space for numbers,
  • printing receipts,
  • menu,

When traffic is low, the same person can take and issue orders.

If there is a large number of customers, it is worth considering separating these functions.

One place takes orders, the other one delivers.

This solution can improve customer flow, but has a space cost. The second window occupies a part of the wall on which it will not be possible to install a full structure.

Therefore, the decision on the number of windows must be made at the design stage of the structure, and not after the interior is completed.

Product preparation area

This is one of the most intensively used places.

The work surface should be adapted to the number of activities performed simultaneously.

With a short menu, one countertop can perform several functions. When selling more, combining everything on one surface quickly becomes a problem.

It is worth determining:

  • how many people work on the preparation,
  • how many GN containers must be available,
  • where tools are stored,
  • is cooling needed directly under the countertop,
  • where finished semi-finished products are stored,
  • where dirty tools go.

A good solution is to place the most frequently used products within easy reach.

Less frequently used supplies may be further away.

Where to place heating devices?

Grills, fryers, grills, rotisseries and ovens are devices that influence the design much more than a simple cabinet.

You need to take into account:

  • dimensions,
  • power,
  • power supply,
  • opening method,
  • temperature,
  • ventilation requirements,
  • spacing,
  • possibility of cleaning,
  • serviceability.

Most often, it is worth grouping heating devices in one zone because it facilitates the ventilation design.

However, this is not always possible.

It is crucial that they do not cause collisions with cooling and the main passage.

Cooling and storing ingredients

Cooling should be planned at two levels:

products needed during current work and stock.

For example, a burger restaurant may have a refrigerated table with meat, cheese and vegetables available directly at the counter and an additional refrigerator for storage.

If everything is in one large refrigerator at the end of the trailer, an employee may be making dozens of unnecessary passes per hour.

When designing cooling, check:

  • door opening direction,
  • pulling out drawers,
  • ventilation of the device,
  • access to the generator,
  • space for cleaning,
  • distance from heating devices.

Washing zone and water installation

The sink and washbasin take up more space than visible on the top view.

Underneath you may find:

  • clean water tank,
  • used water tank,
  • pump,
  • heater,
  • wires,
  • valves,
  • drain.

This means that the space under the sink often cannot be used as regular storage.

The design must also provide access to the pump, cables and components requiring service.

Warehouse – the most underrated part of the trailer

Everything looks good in the visualization until we add supplies.

You need to store somewhere:

  • products,
  • bread,
  • spices,
  • sauces,
  • packaging,
  • mugs,
  • napkins,
  • towels,
  • cleaning products,
  • gloves,
  • bags,
  • cutlery.

If the trailer is operated without additional storage next to it, the space requirement increases.

Before approving the interior, it is worth answering the question:

how many working hours should the trailer handle without replenishing supplies?

This completely changes the design.

How many countertops do you really need?

Too little countertop is a common problem.

Too much can also be a mistake because the countertop takes up space that could be used by an appliance or a walkway.

Every surface should have a function.

For example:

  • product preparation,
  • putting aside after processing,
  • packing,
  • publishing.

It is not worth designing one very long surface without considering who will use it and how.

Sales window and dispensing station

The window affects the interior and the façade at the same time.

There is often a sales counter underneath it.

Nearby you need to plan:

  • ready orders,
  • terminal,
  • packaging,
  • drinks,
  • accessories,
  • place of the customer receiving the product.

If the window is too close to the cooking zone, the customer service employee may block the cook.

If it is too far away, the finished dish has to travel an unnecessarily long distance.

How to plan the work of one person?

One person needs a system that is as compact as possible.

The most important devices should be located close to each other.

However, this does not mean that the interior has to be cramped.

One person must simultaneously:

  • prepare,
  • operate devices,
  • accept orders,
  • pack,
  • spend
  • clean up.

Therefore, it is worth minimizing distances.

How to plan the work of two people?

If you have two employees, it is worth dividing the tasks.

For example:

Person 1: grill / stove / fryer.

Person 2: folding / packing / customer.

The arrangement should allow both people to work without constantly crossing each other's path.

If they both have to use one refrigerator between stations, a bottleneck quickly develops.

What does three or four employees change?

In a larger team, there is a problem of communication.

It's not enough to make the trailer bigger.

Roles need to be separated.

For example:

If each employee can stay primarily in their own zone, work is much smoother.

Ventilation and arrangement of devices

Ventilation is not an add-on that can be easily fitted at the end.

The hood takes up space above the appliances.

The wires need to be routed somewhere.

Filters must be available.

The air removed from the trailer must also be adequately replenished.

Therefore, the heating zone should be analyzed together with ventilation when creating the plan.

Service access – a space that is often forgotten

The device can fit perfectly between two cabinets.

The problem comes when you need to get to its back.

The design should provide for:

  • access to generators,
  • valves,
  • wires,
  • drains,
  • pumps,
  • filters,
  • switchboard,
  • ventilation elements.

Some components will be serviced rarely, but when a failure does occur, lack of access may mean dismantling the structure.

Doors, drawers and device collisions

In a static view, everything may look fine.

Therefore, you must draw the elements in an open position.

Check:

  • refrigerator doors,

  • furnace door,

Ergonomics and number of steps while working

One simple way to evaluate a project is to count the distance of one order.

Let's say you place 150 orders a day.

Therefore, a well-designed interior can impact productivity without increasing the number of employees or equipment.
